Chef Chettie's Fried Chicken

When it comes to fried chicken its all about the breading!

All my buttermilk people don't get mad but ... No buttermilk will ever grace the presence of my chicken! Follow this recipe you will never go wrong. This recipe is crispy, crunchy and delicious.

To get started here's your ingredients:

1 lb of chicken your choice of chicken pieces

3 TBSP of PinkGritz seazon it! AP seasoning ( click here to purchase)

1 3/4 cups of self rising flour

1 cup of cornstarch

2 cups of water

48-64 oz Canola oil or Vegetable oil (for deep frying the chicken)

Cooking Instructions:

Pour entire bottle of oil in a deep fryer or deep pot heat oil to 365 degrees if you don't have a thermometer after 10 minutes of oil heating on medium high sprinkle a little bit of flour and if it floats to the top your oil is ready. ( caution **never splash water in pot)

While your oil is heating up...

*combine 2 cups of water and 3/4 cup of the flour in a bowl and whisk.

*In a separate bowl combine 1 cup of flour, 1 cup of cornstarch and 2 

 tablespoons of the seazon it! seasoning and mix with a fork.

* take the last tablespoon of seazon it! seasoning and mix with the raw   chicken pieces. Dip the chicken in the water until coated and dredge in the flour ( for extra crispy repeat dipping process and dredge again for extra crispness) repeat these steps until all chicken pieces are coated.

* once oil is ready add your chicken no more than 6 pieces for whole chicken parts. if you are using party size wings no more than 10-12 pieces in your pan after 2 minutes of frying move them around to make sure they are not sticking and then let fry for an additional 13 minutes or until they float and bubbles quietly simmer down!

you can also pair these wings with one our signature sauces!
